The first experiment

Barrel Reserve Old Tom was the first release in our Experiment Collection. We took our American Botanical Gin and asked what smoke and wood would do to it.

The grapefruit peel is smoked over pecan wood, which gives the gin a smoky, candied-pecan note. The gin is barrel aged for one to two years, giving the botanicals and smoke time to develop alongside the oak.

Why Old Tom

Old Tom is the slightly sweetened style of gin that bartenders reached for before London Dry took over, the gin behind the original Tom Collins and the Martinez. We lightly sweeten ours with cold-smoked maple and agave syrups. That gentle sweetness is part of its Old Tom character, alongside the botanicals, smoke and barrel aging.
