The whiskeys

Five ways into American whiskey.

Most of what we make is whiskey. Each one starts from a different question about grain or wood, and answers it in the glass.

Bottle of Oppidan Four Grain Straight Bourbon

Straight bourbon whiskey

Four Grain Straight Bourbon

Every grain has a job.

Four Grain combines the four major grains of American whiskey: corn, wheat, rye and malted barley. Each contributes to the balance: familiar bourbon sweetness, a softer wheat character and a rye-spice finish.

Bottle of Oppidan Solera Aged Bourbon

Bourbon whiskey finished in French oak and Oloroso sherry casks

Solera Aged Bourbon

Three woods. One continuous conversation.

Solera begins with corn, malted rye, chocolate malted rye, Special B and two-row barley. Chocolate rye and Special B are specialty malts, kilned dark, more often found in a brewhouse than a distillery. They give the spirit a malty, cocoa-tinged foundation before it ever sees a cask.

Bottle of Oppidan Smoke + Sea

Straight bourbon finished in French oak and peated Islay casks

Smoke + Sea

Bourbon first. The coast at the end.

Smoke + Sea starts from two of our own whiskeys: the Four Grain and Solera mash bills. Together they bring malt, chocolate and familiar bourbon sweetness. Then the finishing casks take it somewhere bourbon rarely goes.

Bottle of Oppidan Malted Rye Whiskey

Rye whiskey, 100% rye malt

Malted Rye Whiskey

One grain. Fully malted.

The word purity comes up a lot around here. Our Malted Rye is made from a single grain, rye, and every kernel of it is malted. Nothing else goes into the mash.

Single barrel straight bourbon whiskey

Single Barrel Bottled-in-Bond Bourbon

One barrel. A bonded standard.

The Bottled-in-Bond Act of 1897 was one of America's first consumer-protection laws. A bonded whiskey must be the product of one distiller at one distillery in one distilling season, aged at least four years in a federally bonded warehouse, and bottled at exactly 100 proof.

Four Grain Straight Bourbon

“youthful but balanced”

Whisky Advocate scored Four Grain 88 points. Their tasting found berries, oatmeal and vanilla on the nose with an earthy, woodsy edge; grain, drying oak, orange, cinnamon and chocolate on the palate; and citrus, cinnamon and espresso on the finish, with water bringing the flavors together and a silky mouthfeel forward.

Solera Aged Bourbon

“raisins and caramel latte”

Whisky Advocate scored Solera 90 points and found the sherry cask from the first pour: ripe and overripe fruit, milk chocolate, pipe tobacco and vanilla on the nose; raisins, coffee and more chocolate on the palate, with cinnamon and butterscotch developing; and a nutty, hot-chocolate finish.

Smoke + Sea

“bright and delicate”

Whisky Advocate scored Smoke + Sea 91 points, our highest. They found a delicate, Scotch-like nose of citrus peel and dried flowers, with water bringing out vanilla and saltwater taffy; a deeper palate of orange peel, allspice and a hint of pipe tobacco; and a sweet, lightly citrus finish that ties into the spice.
